This is the salad we make when the fridge is half-empty and the day is half-over: a can of chickpeas, the crunchy vegetables that are always around, olives and feta for salt and richness, and a lemon-oregano dressing that takes less time to whisk than the salad takes to chop. Fifteen minutes, no cooking, and it tastes like you planned it.

Chickpeas make it a real meal rather than a side thought — they bring protein and fiber, and they soak up the dressing as the salad rests, so leftovers genuinely improve overnight. Take it to work, take it to the picnic, serve it next to grilled chicken, or eat a double portion standing at the counter. We have done all four, in one week.

Dress it early, not at serving

Most salads wilt in dressing; this one improves in it. The chickpeas, red onion and cucumber all relax into the lemon and olive oil, and the flavors round out after even thirty minutes in the fridge. The one thing to add at the table is the feta if you like it in distinct crumbles — folded in early it melts into the dressing, which is delicious in a different way.

Make it a full meal

As written, this is a light lunch or a hearty side. To turn it into dinner, serve it over a bed of chopped romaine or quinoa, or add a can of good tuna, a handful of shredded rotisserie chicken, or a jammy boiled egg per person. A warm pita on the side handles the job of sopping up the dressing that escapes.

Ingredients

  • 1 can chickpeas, 15 oz (425 g), drained and rinsed
  • 1 English cucumber, diced (about 300 g)
  • 1 1/2 cups cherry tomatoes, halved (225 g)
  • 1/2 small red onion, finely diced (about 60 g)
  • 1/2 cup Kalamata olives, halved (75 g)
  • 3/4 cup crumbled feta (110 g)
  • 1/4 cup extra-virgin olive oil (60 ml)
  • 3 tablespoons fresh lemon juice (45 ml)
  • 1 teaspoon dried oregano (2 g)
  • 1 garlic clove, finely grated (about 3 g)
  • 1/2 teaspoon kosher salt (3 g)
  • 1/4 teaspoon black pepper (0.75 g)
  • 1/4 cup chopped fresh parsley (15 g)

Amounts are for the yield below. US customary measures first, grams in brackets for scale users.

Step-by-step instructions

  1. Whisk the dressing. In the bottom of a large salad bowl, whisk the olive oil, lemon juice, oregano, garlic, salt and pepper until combined. Dressing first means every ingredient gets coated as it lands.
  2. Add the chickpeas and onion. Tip the chickpeas and red onion into the dressing and toss. Let them sit while you chop the rest — even five minutes takes the raw edge off the onion and starts the chickpeas absorbing flavor.
  3. Add the vegetables. Add the cucumber, tomatoes and olives and toss gently until everything is glossy with dressing.
  4. Rest and finish. Refrigerate for 30 minutes if you have time — it is good now and better then. Fold in the feta and parsley, taste for salt and lemon, adjust, and serve.

Storage & reheating

Keeps beautifully for up to 4 days in the fridge — one of the few salads that is better on day two. If you plan to keep it that long, store the feta separately and add it per serving. The cucumber slowly releases liquid, so give leftovers a good stir and an extra squeeze of lemon before serving. Not suitable for freezing.

Frequently asked questions

Can I use dried chickpeas instead of canned?

Yes. Cook 3/4 cup (150 g) dried chickpeas until tender — you will get roughly the same quantity as a drained can. Home-cooked chickpeas are firmer and nuttier; let them cool in their cooking liquid before draining so they stay plump.

Is this salad good for meal prep?

It is one of the best salads for it. Portion it into containers on Sunday and it holds its texture through Thursday, which is more than almost any leafy salad can claim. Keep the feta separate if you like it crumbly.

What can I use instead of feta?

Goat cheese gives a similar salty tang. For a dairy-free version, skip the cheese and add a diced avocado at serving time, or a spoonful of hummus swirled through the dressing.
